Wednesday's Plate -
Grilled Swordfish with a Teriyaki Drizzle, Breaded Okra (Def NOT an Air Fryer Item- Fry in oil next time) and Black Beans & Rice... and a Salad, of course........

I haven't had Swordfish in years ...

My plan for this evenings meal is going to be my version of
Sizzler's Malibu Chicken, served with Cheese Tortellini and a veg...
that's my plan and I'm stickin' to it, dang it, no matter how tired I am! :glare:
We were in the yard all day today getting up the third batch of leaves before it starts to rain tonight.
Yes! I said rain!
We've only gotten 1/2 inch presip. so far this year! We need some water!

And may I also say, I'm becoming not a fan of deciduous trees? :mad:
Kinda over this leaves business!
Yes, yes, I could pay someone to do it for us,
but I'm a very hard headed Portuguese/Hawaiian Woman
and I can still do it myself,

K-Girl, your post is more Petty Vents and less Wednesday dinner. [emoji38] Our sweet neighbor across the street leaf blowed our yard in exchange for a quart of mushroom- barley soup. I slipped him some folding money this time, too.


We had breakfast for dinner today. Pan roasted baby potatoes and link sausages for each of us, plus two eggs each to order. Himself had very soft scrambled eggs with onions and Cheddar cheese. I had an omelet with prosciutto, avocado, and mozzarella cheese.

If I get my sink connected, I will not need to use my "make-shift" kitchen. However, the spaghetti with eggplant, tomato, and pepper sauce was pretty yummy cooked in the instant pot!

I made meatloaf and served it with mashed potatoes and rødkål (Danish red cabbage). That was a satisfying, tasty supper, if I do say so myself. It used up all of my spoons, but, it was worth it.

Wednesday's Plate -
Grilled Swordfish with a Teriyaki Drizzle

I love swordfish. Back when I lived in So. Cal. we got great 1 inch steaks, which we grilled on the BBQ with a great marinade*. Unfortunately, where I am now that is no longer an option.

* Olive oil, a dash of wine vinegar, garlic, soy sauce, pepper, and fresh orange juice.
