Got a recipe for Ricotta stuffed Brussel sprouts ( I posted it in another thread). My wife , being a vegan, wouldn't be able to eat them, so I altered the recipe and made Stuffing Stuffed Brussel sprouts. They came out really good. No surprise or unique tastes, but works. Had left over stuffing so stuffed some mushrooms. In addition had corn on the cob, asparagus and some vegan loaf type of a thing.
