As for ham, I too have a problem with too much salt. One brand of ham has 25% less sodium, which is just right, and Hillsborough Farms has a low sodium slices in a nice reusable plastic container that is good too.
For regular day to day use, I use Jenny-O's turkey ham. It really looks and tastes like ham and isn't salty. I use a hand slicer to make thin sandwich slices out of half, then cut the rest into 1/2" slabs to dice for use in casseroles.
