Dang it, KL. I don't have anything like that. Could you give me an approximation of what you think would make up that seasoning? I have cayenne, Tabasco and cayenne, for starters? Help, I really need to get something special for chicken.
Actually Z, the seasoning called Tajin' contains nothing but salt, chili pepper powder, and dehydrated lime. The ready made sprinkle has just the right proportions and isn't expensive in the grocery store. You might be able to get close by rubbing the skin of the chicken with lime juice and sprinkling on a combo of salt and chili powder. I personally think cayenne would be too hot if not used very sparingly. Roast your chicken at a high temp, and it will get a beautiful golden brown because of the chili powder.
