I was able to get registered for a KCBS Judging class that was fairly close-by to where I live. What kind of things should I expect from the class? Is it something that I'll be taking a lot of notes on? Are classes fairly standard, or do they from class to class?

I was expecting a picture of giblets. But nice bird ya got there!

Glad I'm not the only one who appreciates beans. My wife made a huge batch of them that we froze and put up for later. Turns out last night was perfect for them.

Since my wife had to work late yesterday, I was charged with preparing dinner. We had some pork chops purchased from a local meat market. On goes a slathering of a honey-mustard mixture followed by a generous helping of some homemade rub. Grilled for approximately 20-25 minutes over charcoal...

I've perused around the boards here as well as some other forums, and I've noticed that the bark on butts is not as dark as mine. What I did with the last butt I did in the Bandera was inject it, slather it with a honey/mustard mix, and generously rub it with a rub consisting of brown and white...
