    Factory Farms destroy the environment, allow desease to develop and infest the animals because of the unsanitary conditions inherant in such methods, and lower property values in addition to the unconscionable cruelty involved. I value my health, that is why I eat NO animal products.

    Some oil DOES evaporate. That is why it gets gummy on surfaces on which it has been for a while. All oil has volitile compounds in it and those are what evaporate.

    The Saturated fat in Coconut oil is not the unhealthy type of saturated fat that is associated with palm kernal oil and the other tropical oils. Coconut oil is by far a very healthy oil if not heated past 120 degrees. It is the oil of choice among the Raw Food advocates above olive oil.

    How about blanching it for a couple of minutes and then peeling it as one would a peach or tomato? A ripe star fruie is nice and yellow with no brown tips. How-in-the-devil do you peel a star fruit?

    I found that using heavy cream instead of sour cream results in a more creamy and soft texture. I have since changed my basic recipe to reflect that. I also have a CheeseCake Factory Key Lime clone recipe published in Top Secret Recipes but I have not tried it yet.
