    Beer is like wine, I can alway find the right flavor for the mood I'm in. My friends like beer too, so I alway have the cheap stuff around for them.

    Where to go on vacation?

    My Dad has a vacation condo on Maui that is right on the ocean. My DW and I like to get away and that is a great spot. I think the web address is mauicondo209 It might be a bit of a flight from WI, but worth it.

    On food and cooking, by Harold McGee--- this book is huge. I also got "an edge in the kitchen"

    Pre-seasoned cast iron?

    I just bought a Paella pan and it also needs to be seasoned. Would the steps be any different than CI?

    How do YOU flip an omelet?

    Before I flip I tell everyone to back away, then after I clean up the stove top I start over. The non-flip seems to be the way to go.

    you make it sound so easy. I think just planning what will go in and then shopping will take longer than making it. I had a Paella that never went into the oven but most of the recipes I've seen have it going into one. your thoughts?

    Which herbs and spices?

    I like to use the fresh stuff I can grow at home. I'm not a gardener but I do have Rosemary, basil, thyme.... I've even been known to use some apple wood cut from the trees in my back yard. I know it's not a spice or herb but it adds flavor when I BBQ.

    I got a Paella pan as a gift and would like to know if anyone might have the best Paella recipe ever. Or maybe I could try a few and decide for myself.

    I ordered a sharpener

    I've been looking at the Global whetsones. They talk up the ceramic qualities of their stones. Is there any truth to that? Are you still using a rod/steel during daily use or just sharpening when you feel it's needed? Global also states that using a traditional steel will damage their knives...

    My family keeps asking what I want for Christmas. What I'd like is to improve my knife skills. Can someone suggest books or videos that I could pickup?

    I've been using a steel on my knives and I thinks it's time to get a sharpening device. Can I get suggestions on a good place to start.

    I get a huge rush cooking for my family and friends. DC looks like a great place to learn and bounce questions off people in the know. I cook for fun, see it, try to make it, then eat it, what could be better.
