    Collard greens too salty, help!

And...don't forget, Collard Greens are HIGH in Potassium Chloride and thus taste "salty" all by themselves. Infact cooking greens (most have the same characteristic) will impart a slight saltiness to plain water when boiled. So salt greens very lightly IF AT ALL for best results and flavor...

    Pasta Poverra

These pasta dishes are rustic and simple and all are delicious. The key is simplicity itself. A pasta, olive oil and a couple of garlic cloves and an ounce of Parmigiano Reggiano or Pecorino Romano, Dry Asiago (the actual cheeses not something pre-grated in a box!) grated into a sauce like...

    Cooking pasta in advance???

I often make Lasagna and find it best to freeze the results uncooked for some future meal. As long as the container is air tight or wrapped in plastic wrap you can keep it frozen for several weeks without fear of degradation.

Deep Frying Machine VS Deep-frying in Pan

375 Degrees or Bust I have a home style deep fryer and find that it is a good tool. You need to fry at 375 to get suitable crispness, good to use a candy thermometer as many of the home machines have only dial type thermostats and the temps can be off +/- 50 degrees or more. A good method to...

Danny, I have gout and have had it for many, many years. I take Colcochine daily as well as other drugs for my heart condition. My gout is exacerbated by the simple NON-act of drinking sufficient water each day...8 glasses is the minimum! That and you need to watch the intake of various fish...

    Beginners guide to knives?

Some practical advice about your knives, the MOST important thing is how well they fit your hand and how easy they are to do the tasks they are called upon to do. Name brands are good knives else they would not still be around. Look at them like they are a long term investment, they are going...

Not enough rise in cinnamon rolls

I too feel the amount of yeast is inadequate for the task at hand. I use 2 teaspoons of dry yeast for three cups of dry ingredients, this gives a good rise in a reasonable length of time. Overworking the dough after the 2nd rise can also creat the situation you are having. Be as gentle as...

    What's the deal with wine?

When starting your wine explorations it is not a bad idea to thin the wine a bit with water to lessen the effects of the alcohol and some flavor components that you may object too. That is how the French and Italians introduce their children to wines when they are young. It works.
