Personally I think that they would be OK but it depends on what kind of cookies you are making, sometimes the other incredients (chocolate chips, oatmeal, coconut) can cover for the vanilla.
You should try brushing your bread with butter instead of an egg wash, I find that this browns the crust much better then eggs or cranking up the heat.

Whenever I make brownies (which is fairly often) I dont use baking powder at all, I find that it makes them more cake like and dry. Go ahead and add a half teaspoon if you dont like them that way but my preference is a big dense brownie that gets you nice and full!
