    I made home made pizza- sausage, pepperoni, mushroom, onion and banana peppers - topped it off with a tall frothy rootbeer. Pretty darn good if I do say so myself!

    It was cold with freezing rain today in good ol' Ohio - I made a killer pot of Chicken Tortilla soup and served it with corn tortilla strips and fresh cheese and onion quesadilla's - yum!

    Caramels help

    It would be best to just start over. When making caramels (or any candy) you have to use a candy thermometer. For soft caramels - "soft ball stage" is what you want. Anything over that is going to turn out hard like brittle.

    ISO Perfect apple pie filling

    Honey Crisp apples are wonderful for pies. They are slightly tart and don't turn to mush. I always toss the sliced apples(about 4 cups sliced) in 3 TBS flour, (and although I don't usually measure this part)approximately 1 tsp cinnamon. My pies turn out just right, not runny.

    Wedding Reception help needed!

    Thanks for your thought mrochester95. the wedding was in May - the reception number exploded to 200 and we settled on really good Escalloped potatoes! Some how we figured all the food right and did not have anything leftover but cake!

    Is it possible to freeze zucchini?

    I have grated it and frozen it to use in zucchini bread or muffins. Works great. My recipe calls for two cups grated, so I measure out two cups and put it into freezer bags. I don't generally keep it any longer than 6 or 8 months. When you thaw it, just place it in a colander to drain. Easy.

    My son is getting married May 17th. We are all helping with the food - its a family affair. He loves my herbed buttered red skinned potatoes and wants me to make these for the reception.     It's 3.39 in this part of Ohio today. Where to cut back??? I was considering not ever buying organic eggs again when I paid 4.12 for a dozen at the local Kroger! But thank goodness - my significant other got the hook up where he works and I am now getting farm fresh eggs for 1.00 a dozen!!

    Middle of the oven is key - Is your pizza pan made of a dark metal? I don't use a stone, but bake it in the middle of the oven using a stainless jelly roll style pan (if I am making a "party size" pizza and always have a nice brown - just crisp on the bottom and soft in the middle crust.
