    CWS - After boiling the shanks in the soup for four or five hours, as you said the meat just falls off the bones. But...the meat is still so chewy and tough. Does roasting them all night take that chewyness out? How exactly do you roast them? Covered, some liquid, etc. Thank you.

    I finally mastered a Lemon Meringue Pie, both beautiful and delicious, if I do say so myself. Each time the lemon consistency is a little different though. I follow my recipe very carefully. Should the lemon mixture ever really boil? Thanks for any comments. Betsy.

    The Venetian has a wonderful restaurant called The Grand Lux Cafe. Everything we have tried on the menu is outstanding. Excellent service, large portions. Our waitress even suggested splitting a meal. Congratulations on the upcoming event. Betsy.

    The make ahead gravy tip is fantastic. I made my yesterday using turkey drumsticks and it is delicious. Used the recipe that was in the Nov. Southern Living magazine. Check gravy off my list. Betsy.
