    Counterfeit canning supplies

Atlas jars Classico pasta sauce seems to come in one quart Ball style canning jars. The jars are labeled "Atlas Mason" but I see that Atlas went out of business in the early 1960s. The rings and lids do fit on a real Ball jar. Should I use them or put the glass into the recycle bin?

    Mystery tool

The long square rod from the handle is not the correct shape for a tenderizer. I'm thinking that the round piece goes into a socket on something - perhaps a vent on a wood stove? The length seems to indicate that you're reaching into some place hot.

Ice Cream that Can Be Frozen

Just a little heads up on home made ice cream - be careful of the temperature of the freezer that you put that bowl in over night. I recently purchased the Kitchen Aid ice cream attachment and tried to make vanilla ice cream. First step: put the bowl into the freezer over night. Hmmm...

    Freezers and temperature

I bought a commercial chest freezer from Sears (roughly 50 to 100% more than the normal "home" freezer). Much of the space is filled with 2.5 gallon water jugs because you should always keep the freezer full to avoid running the compressor every time you open it. The food safety FAQ says to...

Choosing a KitchenAid mixer... for myself...

Also you should account for the fresh bread syndrome. Fresh bread is like crack cocaine; the first tastes are cheap and the next thing you know you're buying a $2500 (used) Hobart mixer.

Which Celebrity TV Chef is actually the BEST CHEF?

I liked James Barber - "The Urban Peasant". He's the one responsible for getting me to cook anything more than hot dogs. There was this one utterly simple soup that he made on his show that I couldn't believe was any good. So I tried it. 1 can of creamed corn 1 empty can of creamed corn full...

What one tool in your kitchen do you treasure the most?

We had a small cabinet over the electric cooktop before we remodeled the kitchen. One dark and stormy night I knocked a jar of powdered Chinese mustard out of the cabinet and onto a hot element. The results were simply amazing! No eye watering, no sneezing but also the complete inability to...

Will I be happy with a KitchenAid mixer?

There is a Hobart M-50 five quart mixer on eBay auction at $299.00 right now. Says free shipping, with bowl but no attachments and "works great". Lots of K5 and K45 machines there too. Not mine, never seen it.

Alton Brown Cinnamon Rolls (failed to proof properly)

High altitude baking book My ex-boss's wife (Susan Purdy) went around the country renting places at different altitudes to test out baking recipes. Both altitude AND local flour types make a big difference to recipes. Here's the name of her book: Pie in the Sky Successful Baking at High...

What type of frying pan to get?

Lodge in the UK You can get Lodge cast iron from Amazon UK. There is also this: ICD Cast Iron Skillet (11.5" Diam): Amazon.co.uk: Kitchen & Home although I've never seen ICD cast iron. Cast iron is very nice to cook in due to the even heating and ruggedness. The downside to it is the...

Frozen chicken - how long is it good for?

Perdue pre-packaged for freezing I bought two packages of 24 chicken thighs yesterday at BJ's (a Sam's Club/Costco type store). They came in a flimsy plastic outer package but inside were heavy plastic vacuum packed three-packs. In other words, eight packages of three thighs. The price was...

    Recanning?

In the big warehouse stores (Sam's Club, Costco, BJ's etc.) they stock large restaurant sized cans of fruits and vegetables. Is it possible to "recan" stuff from these? Take one gallon sized can of fruit cocktail and turn it into human sized portions? Or beans or corn or ... The price per...

    Containers for repackaging frozen food

Is "Ziplock" better than generic bags? Ok, I'm giving up the idea of gallon glass jars in the freezer. Most of the replies say that "ziplock freezer bags" are better. Is this a generic ziplock or the trademarked "Ziplock"? Is one brand better than another? "Ziplock" versus "A&P" versus...

    Containers for repackaging frozen food

You've probably all seen the large packages of frozen vegetables for restaurant use that Sam's Club/BJ's/Costco sells. Is anyone out there repackaging these things into human sized portions? I was actually thinking of using those large gallon sized glass jars that seal with the rubber ring and...
