Pulled Pork Pizza YUM !!!! C

I was given The Joy of Cooking a thousand years ago as a wedding present, I still use it often.

Made a new recipe of Grouper Kiev, it was great. Black beans with garlic and spinach as a side, C

I just set the alarm for DH to get up at 1 to put the pork butt on the Big Green Egg for pulled pork tomorrow. We will have sides of Grits and Greens casserole, Slaw, Baked beans and deviled eggs. Cupcakes and Ice Cream with sliced peaches for dessert.

How about Cheese Grits casserole or Grits and Greens. Always lovely with fish. Also with asparagus being in season up there try wrapping your filets around some blanched asparagus tips and red pepper strips and bake serve with hollandaise. A little wild rice with lemon is a nice side. C

Had baby greens salad with feta, W W spaghetti,tomato sauce with panchetta and garlic bread. C

Chicken and Eggplant Parmesan over Israeli Couscous sauteed in butter and roasted garlic, Fennel/arugula Salad. Mango sorbet and vanilla ice cream parfaits with Keylime and coconut squares for dessert.

Oh I can't wait!!! we are picking big spicy steamed blue crabs tonight with sides of corn on the cob, sweet pickles and cheddar cheese. Oh and ICY COLD BEER !!!! C

Just make a lite vinaigrette and add lots of chopped basil. I agree with ErikC pesto is the way to go and you can freeze it in small packs. I like to toss it in with pasta, broccoli, shrimp or scallops and calamata olives, makes a great quick supper. C

Salmon on the grill, leftover Green bean/blue cheese salad and Sauerkraut Salad.

I think I would add an egg as called for in crab cakes C

Looks like I am going to have a great first time Avocado crop and I need recipes other than Guacamole, hopefully something I can freeze. Any Ideas ??? Here is a pic of one of the babies.

I made lemon cup cakes last Fourth of July and iced them with pink peppermint icing. It was good, reminded me of the lemons with a peppermint stick in them that they served at the fairs many years ago. C

A nice thick Filet Mignon Steak cooked in butter over an open flame in a white hot cast iron skillet topped with caramelized onion, pasta salad and corn on the cob.

Our friend grows the most wonderful mangoes, I am making Mile High Mango Pie for Memorial Day. C

Pulled pork pizza using some of the pork from Friday night. I think that we will cook it in the Big Green Egg. C

DH has been smoking a pork butt since 8 this AM so we are having Pulled Pork with vinegar sauce, Grits and Greens casserole, Slaw, Baked Beans and Mile High Strawberry Pie for dessert. I can hardly wait !!!! C

The Swai was easy, just wrapped a fillet around blanched asparagus and pepper and baked it 400 for 15-17 min. Gingerbread was bread pudding recipe using ginger bread, easy peasy. C
