    I can definitely agree with that. And in reality, the 2 3/4 cups IS spread between 8-10 servings, so is isn't that bad. We just wanted to see if we could make it even healthier without sacrificing on the flavor (at least not too much).

    Potato Soup is definitely a good way to go as some have already said. Me, though, I would mix in some garlic, cilantro, and chipotle's and bake it in some bell peppers.

    Another really good option, is to find a vegetable lasagna recipe you love, and replace the noodles ENTIRELY with eggplant slices. Just slice them a little thinner than normal. Turns out great!! This is usually how my wife makes our lasagna.

    You can also play around with how far open your actual gas line is from the bottle. A little trial and error, and you will get the range you want on your grill. If done right, this will result in the juiciest steak you ever did have!! :smile: This is also how I do a smaller pork loin.

    How many tomatoes??? If you have plenty, you could use all of those ingredients, and buy some pasta and meat and give a go at making your own homemade pasta sauce. Mmmmm... garlic, onion, carrot, gouda, and some herbs sound like a great sauce to me!
