    Reusable Canning Lids

My wife found these. I am thinking about getting a set. It seems like and old idea redone but that is not always a bad thing. TATTLER Reusable Canning Jar Lids Home Page

    Fast Morning Recipes

Today, while gathering clothing, waking children, waking the wife and letting out the dogs, I decided to make chicken chili in the crockpot for dinner (I needed something to go with the large amount of yellow rice I have leftover) I grabbed some frozen boneless chicken thighs, a couple bags of...

    Street Carts

Anyone ever hit them? Tonight on the way home, I pulled a U turn to get Elote (Mexican style corn) from a street cart. I think that its the only way to truely appreciate it. (no not corn in general, this particular style of corn) Lets hear your favorite street card food. Anyone?

    Indiana/Illinois Breweries

We went to the 3 Floyds in Munster, Indiana today. It was amazing!!!!!!!!! They have a beer called "Stay In School" it's like a liquid coconut macaroon with extra spice!!!! At the same time its not a froofy beer. It still has good solid foundations. The food was divine!!! GO THERE!!!! I'm a...

    Birria De Chivo!!!

Had this for dinner tonight. We had to go over and shovel snow for the old folks and we didn'[t have time to cook. So we took the kids out to a tiny Mexican place that my wife and I often go to when the kids are off doing something else. It was AMAZING. The wife found this recipe. It looks to be...

    Canning Pea Soup

Last night I canned 4 quarts of pea soup. It had ham in it so I used the pressure canner. Everything has seemed to go well. However, after the canner was down to room pressure I pulled the jars out of the water and placed them on the counter. They have an excellent seal, nice and tight but the...

    Major Milestone

I'm pretty proud of this. Normally I am pretty low key when it comes to pounds lost and stuff like that but this is nice after so long. A little background. I'm a big boy. Some would say scary huge. I was in an adult body long before my brain ever caught up (some would say it hasn't yet!) I...

    Chicken meatballs

The house is on a diet. Sometimes I feel I need to go in a new direction. Last night was one of those nights. I bought a huge amount of boneless skinless breasts, about 6 lbs. (yeah yeah, I like leftovers) I ground them up in my meat grinder. At the same time I ground up 4 medium carrots and...

    Yogurt!!

Confession time. I am a fat American. In my defense, I do have an out of wack thyroid but I have been chubby my whole life so the thyroid just added to that. I enjoy cooking and have always tried to reach a nice balance between rich and sparce when it comes to fats (cheeses, creams, oils...)...

    Pulled Pork Shoulder

I had an excellent dinner tonight! 5 hour slow cook over mesquite charcoal. I skinned the shoulder but then just scored the inside of the skin and layed it over the top of the roast for the first 3 hours. Sage, curry powder, chili powder, smoked paprika, onion powder, garlic powder, salt...

    Went out on a limb

And it turned out great! I made a nice veggie curry today for dinner but I wanted to use up my "standard" rice. I have switched full time to Basmati. To dress it up and bring some more flavor and dimension to the dish I added almond extract to the cooking rice. It was outstanding!!

    Tomato question

Last year I had a bumper crop of Romas. I had no time so I froze the lot. I know a brief dip in boiling water will allow me to remove the skins but if I allow them to thaw completely they collapse and they are near impossible to seed. Do the seeds really have that much of an effect on the...

ISO help using up self-rising flour

We had some guests this year from Aussie and one of them wanted to make dessert for us. She made a golden syrup sponge for us. It was dellicious and very very rich. My problem? One of the ingredients was self rising flour. I never use it. None of my recipes call for self rising flour. Do...
