    Andy ~ I think the "formal" name is 'Chee Kufta" - maybe the "Chee" means raw? My MIL used to make it. It was definitely raw, and a mix of prime beef & lamb. I have had baked kufta also - usually baked in a chicken stock w/lemon.

    Frozen cooked turkey questions.

    Enchiladas - yummy. Even shredded in tacos. One of my favorite ways to use cooked turkey is just to rough chop it and add it to a nice dark green salad with a homemade vinaigrette dressing. I've made spicy white bean chili before with leftover cooked turkey before; that's always good. Freeze...

    What are you baking today?

    Only a couple things today... Honey oatmeal bread and peanut butter chocolate chip cookies. I make (school) lunches for four- my two sons, and then for two friends of my oldest son, who hate school food. I try to bake all my own bread, and keep any "sweet" snack homemade.
