    This plating looks odd... any suggestions?

    I agree with potatoes on the side. Everything looks so dark against the stark white plate. Potatoes on the side would help even things out. Also the picture doesn't do it any justice because of the harsh shadows.

    A good set of chef's knife for around 100 bucks?

    I have lots of different knives but find myself using only 3 or 4 on a regular basis.     Cleaver question?

    Ok, I've decided I need a meat cleaver to do some heavy work where I don't want to use my MAC chef's knife. Do I really need to spend as much for a cleaver as I did for my chef knife or will a less expensive alternative be fine? Any suggestions on brands? Thanks for any help.

    I'll watch the temp a little closer next time. I did have a pretty good bubble going. Mine has butter, garlic, scallions, cream, and 1/2 Parmesan and 1/2 Romano. Not really classic but still good. I will also pre-cook mushrooms, shrimp, crab meat or chicken and add to the sauce at the very end.

    We always do birthday dinners where the birthday boy/girl gets to pick what they want for dinner. By far the most popular is my Chicken Divan. I always make a double batch just to make sure there's enough for everyone. Easy and quick but a real crowd pleaser.
