    What peeves you?

Brace yourself Z but our "wonderful" govt. obtains control of the Senate on 1 July. This is a government that has gone out of its way to dessimate the public school system (you should see the funding private schools get - they are trying to force people into this user pays system. I refuse - the...

    What peeves you?

Hey Bucky - I'm listening & I hear you loud & clear (& TJ has just won another fan - great quote & so so TRUE). I am the original dissenter - the "Queen of Confrontation" because I cannot condone complacency & loathe apathy. Miss Popularity I will never be but bollocks to that - I am true to...

Do you put milk in your tea?

Drink bucket loads of tea every day & yes always with milk (& a half teaspoon of sugar per teacup - NEVER in a mug). And it must be hot, hot, hot!!!! Love my tea!!!!!! Probably only have about 3 cups of coffee per week compared to about 50 or more cups of tea!!! SK

    What peeves you?

Cheers buckytom & I love your signature Z (made me think of ME instantly the first time I read one of your posts:lol:.) You see, my life changed also when some do-gooder teacher of Tom's pointed out he might be ADHD. What the **** was that - weren't they slow-learners or something I thought...

    HELP - Chicken Stock Disaster

Forgot to tell you how it turned out - liquid as ALL my stocks do but (as usual) extremely flavoursome (made some delicious Vichyssoise with it). This was what I expected to happen though. Concentrated the remainder for the freezer (to save on storage space) - after the fat was removed from...

    What peeves you?

I'm intolerant of intolerance - totally sick of people trying to jam my octagonal personality into the boring round "socially accepted" hole. Happens to my son too. If one more person uses some incongruous BS initials like ADD or some such crap to pigeon hole us I will send them into orbit...

    Preparing food for the freezer

I have used the old drinking straw trick for years but would NEVER recommend using it with raw meat (esp poultry). You guys in the US have all these snazzy (read expensive) machines (that look a lot like laminators!!) to remove a little bit of air!! Here you can buy (from kitchen specialty...

    Basmati Rice

You don't need to rinse real basmati to cook in a microwave (and you don't need a special rice cooker - just a pyrex dish with lid will do)- about 1 1/2 cups of rice to 3 cups of HOT water (or preferably hot chicken stock for great flavoured rice) for about 15 mins on high. Let it stand for...

Has anyone tried fake ground meat?

From memory its called "nutmeat" here in Oz. Had a vegetarian friend cook it for me YEARS ago - said I wouldn't be able to tell the difference. I could - it was AWFUL!!

What do you serve with casseroles??

I'm with Constance - crusty bread (& butter on the side) is all you need. :chef:

    Any other Aussies out there?

I joined yesterday & am really curious as to how many Australians (still living in Oz or expats living abroad) are on the forum. Come on you shy little flowers - show yourselves ! Cheers, SK Hope I haven't posted this in the wrong place

Opinion on exercise and eating right

:ermm: I just have to ask - what is the attraction of MacDonald's food? It is unpalatable. The meat is flavourless, the buns taste like cake they have so much sugar in them, the cheese is like plastic.....and those pickled gherkins!! On a hamburger?? Don't you guys have real hamburger shops over...

    Pie Irons

I grew up on jaffles (our iron was round - we used it inside the house over a gas jet on the stove). My favoruite was just cheese - I LOVE melted cheese!!! My mum used to give me one when I was home sick from school to cheer me up!! Cheers, SK

Proper Stir Fry? Help me out!

If the wok your mum is sending you is new don't forget to season it before you first use it. Most carbon steel woks have either a fine laquer-like or machine oil coating to prevent rusting - this has to be removed before you cook with it. All the information for seasoning your wok can be found...

    HELP - Chicken Stock Disaster

Thanks Michael - it makes perfect sense now (especially since you used the gluten / yeast CO2 parallel). I am just about to make another batch of stock but, this time, I WON'T TOUCH IT AT ALL!!!!!! Will post how it comes out this time - should be A1. Cheers SK :chef:

    That One Dish

One sachet (here that is equal to 7 grams of dry yeast) equals about 15 grams fresh or compressed yeast. I have never used fresh yeast but, from what I have read & spoken to people who have used it, a general rule of thumb is to double the dry yeast rate for fresh - ie 10g dry yeast equates to...

    That One Dish

Oh bread??!! Ask me ANYTHING! I never buy bread - make all my own loaves, rolls, breadsticks & pizza bases (not by machine but hand). Got to admit I feel VERY superior in this field - never had a failure. I also make the biga for the bread & use left-over whey from yoghurt or cheese making in...

    That One Dish

I agree with Michael - choux pastry freaks me out - never tried it (will one day, though). It has to be so LIGHT - I think that's what scares me. As for English puddings - what feaks you about these. The British (love 'em) aren't the most imposing of chefs  Their recipes are pretty...

    Newbie Q

Please don't beat me up for this question  but where does the tag under your username come from? I only joined today & mine says "Assistant Cook" - I searched all over the site to find what this means. As I didn't assign it to myself I assumed it was given to newbies. I don't...

    HELP - Chicken Stock Disaster

Thank you SOOOOOOOOO much guys - you have answered my question (& then some). Yes, I did stir the stock (something I have never done in the past - don't know why I did it this time except that I do remember doing it!!). Usually I just let it simmer undisturbed but I was in the kitchen doing a...
