    What do I do now?

You have my attention. And, my stomache's attention. I think the mashed carrot sounds awesome.

    Stock vs. Broth

Certainly. Capsicum annuum. A cayenne is also capsicum annuum. Very different peppers but closely related.

    Stock vs. Broth

Haha...Peppers which actually aren't peppers at all. Pepper(corns) are the little berries that you crack over your salad. Jalapenos, habaneros etc. are actually called chiles. Chiles were called pepper due to their "peppery bite" when they were first introduced to Europeans. Chili, however, is...

    Stock vs. Broth

I was confused about this as well. I'm the kind of person that likes to use the official meanings even if they're both generally accepted. For the same reason I prefer to use the word "Chile" instead of "Chili, Chilli, or Chillie"

    Meatloaf??

Follow something along the lines of Andy's recipe above. The egg will hold it together. However, my tip: Once all of the ingredients are incorporated add a little milk to thin it until it just barely stands on it's own without "flowing" into the shape of the pan. When you have eggs and a ton...

    Homemade Food

You're preaching to the choir. Mine is the latter as well. The only time it gets really thick is when I'm fired up about something. That sounds awesome. I love the spicy/sweet thing. You have my attention.

The Best Thing I Ever Ate...Really?

I really do like the channel as well and I realize that they need to "mix it up". I just hope it's not a sign of things to come. I guess I just miss the days of cooking TV that included Jaques Pepin and Julia Child.

The Best Thing I Ever Ate...Really?

Yeah, I must say I'm a bit disappointed in Food Network over the past few years. It's almost as if it's in that in-between phase that MTV went through before they stopped playing music.

The Best Thing I Ever Ate...Really?

Is it just me or does this show seem like paid advertisements disguised as a Celebrity Chef TV show?

Don't perpetuate the "Joisey" stereotype. We all know that only New Yawkahs sound like that. :D

Five Types of Mushrooms: What to do?

I love the idea of doing a trio of something. I think beef, matsutake and miso will go really well together. I also love the idea of shellfish with cilantro and mushrooms. Maybe a surf, turf and sky trio. :D You left me with some really good ideas to play with. Thanks for the inspiration!

    Eggplant Parmesan

I make mine in about 5 layers with the skin on. I slice the eggplant into coins, brush them with olive oil dip them in flour, egg and breadcrumbs. :chef:

Five Types of Mushrooms: What to do?

Here's the jist: I entered a contest to cook with dried mushrooms. I had no idea what mushrooms I'd get. The box came today and I have Matsutake, Lobster, Black Trumpet, Chanterelle and Porcinis. Probably about two ounces of each. Reconstituting the mushrooms is the easy part - the sticking...
