Who are professional chefs here? Who are just cooking junkies?

God forbid I get a bigger kitchen I'd have to go out and spend major bucks on stuff to fill it. It's just my nature and I've got a wish list a mile long. Besides, I'm lazy and don't want to walk the extra few feet to grab the Panko as inspiration overcomes my sense of sensibility. I have the...

Who are professional chefs here? Who are just cooking junkies?

I so know what you mean!!! I can't cook anything ever if there are dirty dishes and stuff on the counters. It's like my mind is cluttered enough, adding to that with stuff everywhere drives me crazy. My kitchen is my palette and I need a blank canvass.

Who are professional chefs here? Who are just cooking junkies?

The kids used to run for cover when I announced dinner was ready. No one hated cooking more than me. No one. I hated every single thing about it. I once blew up a Thanksgiving turkey. The size of the fire ball coming out of that smoker was a sight to behold as I was blown through the...

What's for Dinner Wednesday November 3?

I don't know what to call it yet. Something with sour cream, maybe cream cheese, a little Parmesan, fresh Italian parsley, a squeeze of lemon, maybe a base of flour and milk, definitely some sauteed mushrooms and onions, a cup of veal stock reduced, left over eye round roast chopped into 1 inch...

    Should I reprocess this?

Thank you. I just wish my grandmother was still alive to advise me. I can't believe how straight forward and simple the advise from writers from decades ago compared to what seems paranoia from today's government advise. It's enough to make one NEVER EVER want to can anything. Yet...

    Should I reprocess this?

I canned chicken stock in a pressure canner yesterday. It's the first time I pressure canned anything. While I was venting I noticed I didn't have the lid on correctly. Pressure was up to about 4lbs and I hadn't put the weight on yet. Anyway, I cut the heat and after it cooled to the point...

    When Is Jam Set?

    Thanks!

    Question about raspberries

The first time I made jam it came out perfect. I think it came out perfect because I didn't know what I was doing. Once I started trying to know what I was doing, it got really complicated. The recipe I use calls for one part sugar and one part fruit. You boil the crushed berries for 1...

    When Is Jam Set?

Thank you, but... Thanks very much for getting back to me. I don't mean to be disrespectful, but I have tried all these methods. My thermometer doesn't really work all that well. I'm 980 ft above seal level. Not quite 1000, but suspect I'm a few feet higher. Anyway, I was reading someone's...

    When Is Jam Set?

I've made jam a few times now for canning. Just actually canned my first batch a few minutes ago. This is really confusing. Not worried about the canning part, but when do you know the jam has set VISUALLY while still inside the pot? I've done all kinds of tests, drip, put in freezer, etc...
