    What are you baking today?

CWS4322, sadly I'm not located anywhere remotely near a farm so no, they weren't farm fresh eggs. They sat in the fridge for 1-1.5 months. Here's the recipe. Have fun! :chef: Hibiscus Macaron Yield: 30 medium size cookies Ingredients: 200 gr Powdered sugar, sifted 125 gr Blanched almonds...

Timothy, I had to google "Jonesing"; learned a new word today! :)

    What are you baking today?

My bad, I guess using the word "curing" was a misnomer. I just wrote a post today regarding how I'm completely butchering the English language, so sorry if I offend! I simply meant that I was waiting for the egg whites to age in the refrigerator. I waited over a month this time 'round, so I...

    What are you baking today?

PattY1, hope you enjoy the picture! :) Aged egg whites whip better than fresh, which is why I was curing them.

Southern Comfort eggnog! I've made my own before and it was delicious, but it's so much cheaper to buy! Love your sushi cancels eggnog idea, Pierogi! It's like my "ice cream has milk in it, so therefore I'm getting my daily value's worth of calcium." BTW, bug me anytime! :) I'm jealous you're...

    Who's Trying to Lose Weight?

I fill 3 mugs with water each morning, the goal being for the mugs to be empty by noon. Repeat for afternoon. Have a glass of water before dinner to curb my appetite, then one right after (so I know not to go overboard on dessert!). Done. 8 glasses.

Getting cookware from closed down restaurants?

I know! I scored an awesome deal on a complete Cuisinart cookware set last Black Friday on Amazon. I had my eye on that set for at least half an year, and I'm so glad I waited for Black Friday :)

Green tomatoes left from the garden

I'm a huge fan of fried green tomatoes. I actually deliberately cut the tomatoes off the vine before they ripen just for this purpose (is that a crime?). Dip in flour, then beaten egg whites, then a parmesan bread crumb mixture and fry. Pair with truffle aioli. Heaven.

Nice. Did you use fresh ginger for the infusion?

    Financier (how to use eggwhites)

"yake"? Not sure if that is a typo or not. Brown butter actually originated from France (beurre noisette) and pretty much means what it sounds like; butter burned on low heat. It gets this caramel, hazelnutty (therefore the "noisette") flavor that's really delicious when used in...

    Financier (how to use eggwhites)

I think it's because 200 years ago, men were the bankers working in the financial industry. It is outdated but if you don't think about it in modern context, and more of a historical one :)

    Halloween Ginger Cookies

Wow fresh grated ginger? Yeah, you've got me on that one! Candied, ground, I can handle, just can't do the fresh! :)

    Financier (how to use eggwhites)

Have you ever tried browned butter financiers? The browned butter heightens the overall flavor of anything else you add to the financier, like the almond powder and marmelade. I adore financiers, especially in autumn (browned butter somehow doesn't seem quite summer, does it?)...

    Who's Trying to Lose Weight?

I need something sweet at the end of each meal too! Sure, I'd like to lose the "last 5 pounds" but I'd rather eat and be happy! I started a new workout regimen a month and a half ago, more to get myself back in shape. I'll be taking a long trip soon, and would prefer to walk and explore instead...

    Halloween Ginger Cookies

I love ginger cookies! I like adding diced candied ginger, but some of my relatives think the candied ginger is too strong for their tastes.

    German Stollen Bread

Thanks for the interesting tidbits, Timothy! I love learning about the history of foods. Being so dense a cake, I didn't think the cake could be catapulted even 100 feet, let alone 450! Pierogi, some of my (weak) relatives did get a little whoozy last Christmas from this cake. I had mine with...

Pureed/Soft food for Grownups? (wisdom teeth)

Sorry Sprout! I had all 4 pulled at once too several years back, and I bought out the store shelves of Jello... only to find that I wasn't much into Jello. Ice cream kept me sustained for a while, and I can go through a jar of Nutella like nobody's business. How bout a creamy mushroom soup...

    New ideas for tacos?

A chef I used to work with grew up in Guatemala and he made the most amazing tacos (I still crave them!). It's bit of a pain though, so it's not something to do if you just want a fast dinner. Take black beans, soak overnight to get them soft, then bring to a boil the next day. Simmer on low...
