Emile Henry pizza stone - feedback, please.

I dont have the brand you have...but I do have a pizza stone! Great thing!! I would becareful of adding too much flour though as it will burn. Better to use polenta (when making pizza - not sure about bread). Only issue I have is cleaning the thing! Can't dishwasher it...not even suppose to...

    Plastic storage and food processors

Plastics have a rough coating...even though they feel smooth... water sticks and even during the drying cycle never really comes off. I seem to get good dishwasher days and bad ones...sometimes they dry sometimes they don't. I did notice that my more expensive plastic things e.g. food...

I brought my tiny rice cooker in Thailand... managed to pack it away in my suitcase and brought it back home. Its perfect!! Use it whenever I make rice, would never go back to the old way again.

What does seltzer water do to a recipe?

I have made cupcakes with coca cola... they seem to be lighter yet dense at the same time! The sugar and fizz react with the baking powders to give a more instant rise. Never tired fizzy drink/water in anything else... but I know you can make batter with soda water and the result is a very...

    Food processor advice

Food processors are not really designed to mince meat... like you found, you end up with mush. I noticed in my Kitchenaid food processor manual that you must FREEZE the meat first...not until its solid...only 30 mins or so... but the harder the meat is the better it will 'chop' instead of...

Cake or Pie from Fresh Pineapple

I have used fresh in a number of recipes...including on top of pizza... all worked fine! Actually it may be even better. I think the only thing with tinned is very limited chance of any 'hard bits' of pineapple core.

    Sifting vs whisking

I usually do as I am told - if it says sift (especially flour/icing sugar) I do it. I am am being very lazy I whisk...or even more lazy and using the food processor I just let it do the work!

    Freezing foods?

Hi, I am always a bit scared of freezing raw meats and fish... cooked isn't so bad, but there is just something that seems to totally change when you freeze raw meat and then defrost it again later - I dont know why, I think its the smell, even thought I know its ok I cant bring myself to eat...
