    My shrinking tortillas

Thank you for all the helpful responses. I learned a lot. The recipe that I used suggested between 3/4 and 1 1/4 cup of water. I immediately added 3/4 of a cup, and then needed to add flour. I added more baking powder and salt but not more lard, and won't make these mistakes again. I...

    My shrinking tortillas

The problem with the corn tortillas has been a little different. Only tried it x3 When I tried using similar recipes online their diameter was only about 4" when I opened the tortilla press. Example Makes 12 tortillas 1. Mix 2 cups masa harina with 1 cup water. 2. Add a dash of salt. 3...

    My shrinking tortillas

Thanks, am pretty sure that's what happened then. Especially because at the beginning I added too much water and then kept adding more flour. Dough is very unforgiving. Michael

    My shrinking tortillas

@Andy M. Thanks. I did wait about an hour but then decided that dough ball needed a little more water and kneaded it in. Then made them into balls and cooked them in a cast iron pan. Should I have waited after adding the additional water? Am new to dough and it's not easy at the beginning...

    My shrinking tortillas

Made flour tortillas today and the taste and look are fine. They were bigger when I took them out of the tortilla press but the moment that I picked them up to put them in the pan they shrank from about 5 1/2 inches to about 4 inches - before they hit the pan. The one that looks a reasonable...

Potatoes that float or sink, starch content

Well if there not named you can only scrape with a fingernail. Don't think going by the color is very reliable. Sometimes small sacks are marked here for baking and boiling which is fine if you want to buy a small sack ;-) Going to make a potato salad now. New York Style Potato Salad Serves...

Potatoes that float or sink, starch content

Well it's very important to use the right ones and the color is not at all a reliable guide. Scraping with your fingernail is pretty reliable. If you can easily scrape the skin off with your fingernail, then they are most likely best for boiling, scalloped, or potato salad.

Potatoes that float or sink, starch content

I tried just now and my boiling potatoes floated but I don't have any baking potatoes to test it on, and will look for some later. Right now they're harder to find, for whatever reason. I used double the amount of coarse salt. The skins on the above potatoes are easy to scratch off with a...

Potatoes that float or sink, starch content

Just been looking for an article that properly explains how to prepare a brine solution to gauge whether a potato is high or low starch. All the ones that I found are similar to this. "If you are not sure which type you have, put one in a brine of one part salt to 11 parts water (11 fl oz...

Thanks for the reply. I have personally never seen fine sea salt in market. And why sea salt? Is Kosher salt, sea salt? Do your see using the phrase, "cause salt" as being a problem?

    Kosher Salt And Halal

I know and we know but I can understand many people not knowing. There are growing objections to supermarket in several countries that now sell Halal meat, so I guess there's a growing sensitivity to these things. I don't have a problem with saying, coarse or sea salt instead of kosher salt.

    Kosher Salt And Halal

I know and that it was how I had it listed in all my recipes. I can however imagine somebody not buying a book if it listed Halal meat. No point in losing potential buyers because they don't understand a term. But sad that such things have become important. My friend in the UK said that he...

    Kosher Salt And Halal

A well meaning person suggested that I don't use the term kosher salt in my recipes because it would be similar to using the word halal, and might turn some people off the book. He said that he's never seen salt labeled kosher salt in the UK Why Most Recipes Ask for Kosher Salt (and When It's...

Some help with my cookbook please

I agree 100% but was harshly criticized earlier for saying sodium bicarbonate instead of baking soda. I obviously opened myself to the criticism of my recipe when I posted and I welcome the positive suggestions, but am saddened at nasty attacks when I am only seeking help. Thanks Michael
