Since winter is round the corner, here is a recipe that will keep you warm and satisfied.
FASOLADA (Greek Bean Soup)
1 can (450gm) of navy beans (drained)
1 medium size onion - chopped finely
1 small carrot - diced finely
1/4 cup chopped celery leaves
1 hot pepper (Jalepeno, chilli or similar)
1 tsp (heaped) tomato paste
5-6 cups of water
Combine carrot, onion and tomato paste with water and bring to a boil. Add olive oil, celery leaves, hot pepper and salt and continue boiling on medium heat until soft.
Add beans to the pot and continue boiling until the beans have opened and the soup begins to thicken. Remove from heat.
