Tuesday 3/27/2012, what's on your plate?

Yesterday was a weird one with me going one way and Kathleen headed somewhere else, until plans changed suddenly. I had nothing planned, she had hers change so in the end she picked up pit beef sandwiches on the way home. :yum:

Pit Beef is Baltimore BBQ (though it technically isn't BBQ).

Why's that? BBQ is low and slow. Pit Beef is cooked hot. They usually char the outside and as they slice it that side is put towards the coals. They also rotate the meat down so they can offer meat at different levels of doneness.

I like mine as rare as they can give it to me.
