What's cooking Friday 4/29/16?

We went to Restaurant Depot yesterday. I can't believe the price on the parmigiano reggiano, $5.79#, but the smallest section was 12#. Maybe next week. Anyway, I grabbed some lobster base and Karen picked up some fresh squid. She fried the squid using a rice flour based coating as an appi. I used the lobster base to make stock for a soup using the leftovers from our crab dinner. I started by making a peanut butter colored roux and added the "Trinity" to it and set that aside as the thickener. Came out pretty good.:yum:
 
Another quick, comfort food dinner. A simple pan of onions, hot dog discs, and potatoes simmered until the potatoes were very tender. Doesn't sound like much, but we sure enjoy it.

Comfort food is always a good meal to have anytime.

I sliced a couple of onions and potatoes (skin on) real thin on my handheld mandolin. Sautéed them in olive oil sprinkled with a mixture of Italian seasonings, salt and a small amount of pepper. Steamed broccoli with butter. Simple and easy. Quick also. :angel:
