I made a chicken stir-fry, but did not like the flavor combination, so I guess I won't be making that recipe again. Actually, what I really did not like was the rice noodles that I served the dish over the top of. So, I guess I might be trying it again with a few changes.

What I did make today that turned out really good was a recipe for Zucchini Muffins. I added some ground flaxseed to the recipe. While I was reading the back of the flaxseed package it said that you could substitute 1 tbsp. ground flaxseed mixed with 3 tbsp. of water (let rest for a couple of minutes) for 1 egg for some recipes. So, decided that muffins are pretty forgiving and decided to give it a try. The muffins turned out great: nice flavor, moist, and it did not seem to matter that I had substituted the ground flaxseed/water for the egg.
