I've got a pot roast going in the oven right now. I need to get off the pc and go prep the veggies and add them to the the pan.

Vegetable risotto (bell pepper, mushrooms, onion, zuccini, asparagus, cooked in white wine & veggie stock) very very tasty!!

Also marinated some Quorn Fillets and shallow fried them.

What are Quorn fillets?

We're cleaning out the fridge tonight. Leftover pork chops, spaghetti, and chinese to clear out.

Beef stew with rosemary dumplings. There's leftover apple peach pie for dessert.

I don't want to go to work tomorrow.

I made a corn chowder - changed it up a bit - served with Cuban bread.

I've got "Chicken Parisienne" finishing up in the oven right now. Basically, bone-in skin-on chicken breasts cooked in a mixture of condensed Cream of Mushroom soup, fresh sauteed button mushrooms, & dry sherry. When the chicken is done, the sauce is then finished off with a goodly amount of sour cream. Will be serving it with plain white rice (to soak up all that great sauce), & plain buttered baby carrots.

We had an apricot-glazed pork roast with creamy rice with cream cheese, parm cheese peas and mushrooms.

Ok, the pot roast is done, gravy is made, and faux Cheddar Bay biscuits are done, and everyone is busy shovelling it into their mouths.

*AllenOK drops to his knees and thanks God for Pot Roast.

PeppA, my other half, just told me it is the best pot roast she's ever had.
