I am Jewish, but do not keep kosher. If you are serving people you don't know well, I would keep it very simple. My suggestions:
Roast Chicken
Rice Pilaf
Steamed Vegetable of your choice
A dense chocolate dessert of some kind. You can use margarine in baking instead of butter

There is 3 separate kinds of kosher. meat, dairy, parve= neutral You can buy parve margarine to serve with bread or to cook with. I am a jew and do not follow kosher eating rules. A nice well composed vegeatarian dish with fruit for desert would be acceptable but check with hubby for ideas.
