When you can't make up your mind which berries to use cobbler
Shiny Top Cobbler
5 cups berries, fresh or frozen
1 1/2 tablespoons lemon juice
2 cups all-purpose flour
3 cups sugar, divided
1 cup milk
1/3 cup butter, softened
2 teaspoons baking powder
1 teaspoon salt, divided
2 tablespoons corn starch
1 1/2 cups boiling water
Spread berries in well greased 2 1/2 quart casserole (shallow). Sprinkle with lemon juice; set aside. In a medium bowl, stir flour, 1 1/2 cups sugar, the milk, butter, baking powder, and 1/2 teaspoon salt until well blended. Batter will be thick. Spoon over berries; spread to edges of baking dish. Set aside. In a small bowl, mix well the remaining 1 1/2 cups sugar, corn starch and remaining 1/2 teaspoon salt. Sprinkle over batter. Pour boiling water over all. Bake for 1 hour at 350 degrees or until brown and glazed.
