Grapefruit Juice

Okay, so I was given a huge can of grapefruit juice. I won't drink it (unless there's some form of alcoholic drink I can make with it), but cooking with it could be an option. Does anyone know a recipe that uses grapefruit juice as an ingredient?

Maybe a marinade for grilled shrimp.

Or a granita.

Fresh Grapefruit Juice Smoothie

1 1/3 cups red grapefruit juice
8 large strawberries
2 medium sized banana (sliced)
8 oz strawberry-banana yogurt
2 tbsp honey
1 cup crushed ice

Place the grapefruit juice, strawberries, bananas, yogurt, honey, and ice into a blender. Cover, and blend until smooth.

Salad dressing
boil down, finish with sugar for a nice gastrique
make into ice cubes for adult beverages

Great ideas. Think you could make a mojo criollo with it, a Cuban marinade. Terrific with pork and chicken. Just Google for recipes, but have not seen any that contain grapefruit juice, but think it would work.

And have to agree with Jeekinz that it would make a fine base for a shrimp marinade.
