Non-wheat flour substitutions

Does anyone know if oat or barley Flour can replace any of the following:
Sorghum flour
Millet flour
Brown rice flour
Tapioca starch

Thanks. Who knew I'd see a day when I was discouraged to be out of millet flour.

If it is a "non-wheat" substitution because of gluten, then neither oat or barley flour will replace any named GF flours.

Instant mashed potato flakes or buds, for thickening sauces and soups. ASK YOUR DOCTOR FIRST.
