CHICKEN MOZZARELLA

2 T. flour dash of salt (optional)
paprika pepper
1 pound boneless chicken 3 c. sliced mushrooms
4 t. margarine 3 oz. mozzarella cheese, shredded
garlic to taste

Roll chicken in flour a spices. Skillet sauté mushrooms in margarine and add garlic. Remove with slotted spoon when mushrooms are brown. Put chicken in skillet and brown. Put chicken in baking dish with juices from pan and top with mushrooms and cheese. Bake or broil until cheese melts and chicken is done.
 
Yes, I use boneless & skinless. The thinner they are the quicker they cook. If you like mushrooms, you will like this recipe. This is one of my favorites.
