Maple Spiced Broiled Salmon

Ingredients

4 salmon fillets (6 to 8 ounces each)
1/3 cup real maple syrup (NOT pancake syrup!)
1/2 cup water
4 teaspoons peeled, grated ginger root
2 cloves garlic minced fine
1/4 teaspoon salt
Salt & pepper to taste

Method

Mix together the maple syrup, water, ginger, garlic and 1/4 teaspoon salt in s amall saucepan. Heat, stirring occasionally, until mixture reaches a gentle boil. Lower the heat and simmer until the sauce is reduced to about 1/2 cup. Remove from the heat and cool.

Place the salmon fillets on the broiler pan and season to taste with salt and pepper. Broil in a preheated broiler about 4 inches from the heat source for about 5 minutes. Remove the pan from the broiler and quickly brush with the sauce. Return the pan to the broiler until the salmon flakes easily. (about 5 to 6 more minutes)
