Baking Temperatures: Home vs. Commercial

One of my favorites shows to watch is Food Factory but is watching is I notice that when baking they use oddball temperatures like 343F, 372F etc. whereas at home we would use 375F, 350F, 325F and so on.

What is the reasoning for this? Better control of the baking process? More accurate ovens?

Just curious.

Are you going by the digital temperature displays on the outside of the ovens? If so, that's probably the actual temperature in the oven rather than the actual setting. When you set an oven to a particular temperature such as 350F, the actual temperature will fluctuate several degrees above and below that setting (e.g 345F-355F). When the actual temp dips below a predetermined level, the oven comes back on the bring the temp up to the set level.

Some of the commercial ovens are convections ovens. They work differently than regular ovens.

I didn't think of convection ovens. I had in my mind that the commercial processors had some secret equation relative to temperature vs. time or a specific moisture content. Maybe I am over thinging this.
