I just purchased a counter top deep fryer, to do french fries.Can you leave the Crisco in the fryer {after straining},or should you put it in the refrigerator? Thank You
 
Oil itself is fine at room temperature, but it is the fine particles of food that end up in the oil afterwards that may be worrysome for bacteria growth. Fortunately the oil is reheated to very high temperatures (above 180° F) so any active toxin would be killed. I'm more concerned about the flavor change caused by such contamination. If it sits for any length of time unused, or gets used more than a few times, it gets tossed.
 
I had one of those deep fryers and always, but always strained the oil after it was cool in a couple thicknesses of cheesecloth over a sieve. Then I put it in the fridge. It will last quite a while but make sure you take ALL food particles out by straining. You can use it over for about 3 or 4 times. After that it becomes rancid.
