I am making an angel food cake, and have 12 yolks left. Any ideas what to do with them? I don't want to toss them! Thanks for your help!

Make a Hollandaise for serving over tomorrow morning's breakfast!

Or make a custard.

After googling for ideas I learned you can freeze them for later use...

Didn't know that... :)

Key lime pie, creme brulee, lemon curd, Boston cream pie, ice cream, creme Anglaise...

I have an old cookbook from the 60's called the "Other Half of the Egg" that is 230 pages of what to do with left over whites or yolks. Jacques Pepin was one of the authors. If you ever find it, buy it! The first "extra yolk" recipe tells you how to cook the yolks to make then into essentially deviled egg filling and then what to put that on for apps. It just gets better.

Well, I am planning to pop them in to the freezer, I won't use them all to make peach french toast tomorrow. I'm thinking about making hollandaise sauce, I love that stuff!
