Wow, must be a regional thing! I've never seen 70/30 either. We see 80/20 once in a while, but in general, it's 85/15 or leaner.

I use 96/4 beef all the time in chili and tacos - you know, things that are heavily seasoned and simmered with liquid. For hamburgers we use a mix of ground sirloin and ground chuck. And so concludes the list of things I make with ground beef, lol.

We have "Regular", "Lean" and "Extra Lean" ground beef here. The extra lean is -5% fat. So I'm thinking that is what you got.
