Gorganzola sauce

Has anyone ever made gorganzola sauce to go with veal?
We had it at an Italian restaurant this past Monday nite and it was so, so, deelish!!!!.....Thanks in advance for your advice....
 
Well, haven't made it to go with veal, but have made it to go with both chicken & turkey. Pretty much same difference.

All I did was make a basic white sauce, subbing in chicken broth for the the milk, & then just melting in a goodly amount of Gorgonzola cheese, freshly ground pepper, & fresh chopped Italian flat-leaf parsley to taste.
 
i, myelf, while i agree that a gorgonzala sauce is great, i'd pair that into a beef item rather than a delicate veal.
 
Actually, "Veal Scallopine with Gorgonzola Sauce" is a classic Italian dish. Both delicate & delicious. Nothing overpowering about it.
