If you get salmon steaks, dust them with flour, then a light coating of dijon mustard, followed by a bread crumb coating. Grill on an oiled grill. My daughter bakes salmon filets with the same coating. I haven't done filets this way (we do steaks on a regular basis), but they might need to be finished under the broiler to brown them. Salmon and dijon mustard is a great combination.
