it mixes well, rolls out fine and then i try to fold it to place on the pie plate or on top, it tears and crumbles...my recipe is..2 C flour, 1 tsp salt, 2 to 4 table spoons ice water...refrigerate 30 mins then roll out..any help is greatly appreciated!!

No fat?
 
Try:
2/3 cup lard
2 cups flour
4-5 tbsp water

No salt, and no refrigeration. You don't need to refrigerate. Just roll and go.
 
You need some shortening. With your recipe I would suggest 1/2 cup of shortening.

My recipe is 20oz flour 8oz shortning 1tsp salt 1/4-1/3 cup water.

The water will really vary depending on your flour. You also need to let the dough rest in a fridge for about 30 min so that the water can distribute better through the dough.
 
In typing the ingredients I left out the 3/4 C shortening and 1/2 C butter. Thank you for the suggestions..i'll keep trying..

Too much fat for that much flour. Increase the flour or lower the fat and you should be on track.
