What about a leg of lamb, scalloped apples, instead of mashed potatoes do mashed cauliflower, horseradish/carrot casserole, or even a big baked sweet potato, and a nice salad?

Prime rib sounds good to me! Open-faced hot roast beef sandwiches for the left-overs! YUM
