Mashed potato Casserole

2 1/2 lb potatoes,pealed and qartered
3/4 c sour cream
1/2 stick butter
1/2 c milk heated
1 tsp salt
1/2 tsp freshly ground pepper
1 c shredded cheddar cheese
1/2 c chopped scallions
Garnish:sliced scallions.

Have ready a 1 1/2-qt shallow baking dish.Boil potatoes in a large pot in water to cover 15 to20 minutes until soft when pierced,drain,return to pot.Mash with a hand held mixer or potato masher.Add sour cream,butter,hot milk,salt and pepper.Beat until blended and smooth.Stir in 3/4 cup of cheese and the chopped scallions.Spread in ungreased baking dish.Cover tightly with foil.Bake 25 minutes or until hot.Uncover,sprinkle with remaining 1/4 c cheese and bake just until cheese melts.Sprinkle with scallions.
 
I've got a similar recipe too, but I put mine in the frige overnight, and then set it on the counter for 30 minutes before popping it into the oven.
