8 Russet Potatoes Quartered (Peel if you want...I love skins)
Boil potatoes until not quite soft. Drain potatoes, preheat oven to 450 degrees.
In a stainless steel mixing bowl mix potatoes and:
1/2 c buttermilk
1/4 c butter
1/2 c sour cream
1/2 c monterrey jack cheese
1 t chopped roasted garlic
Salt/Pepper to taste.
Incorporate all ingredients, but try not to mash potatoes. Put in baking dish, and put in oven and cook until top starts to lightly brown.
That's it, very easy...enjoy.
