Whatever is in the middle, it looks like it is topped with sauerkraut. That looks like the one in one of my mom's cookbooks. I guess you could also put macaroni and cheese in the middle!

Barb, those are actual recipes from old cookbooks/recipe cards. I think the center is coleslaw, but your guess is as good as mine.
