Oil infused with what CQ?
I also love pan sauces, I just did one the other day for fillet of beef. Cooked meat MR, removed from heat, tented and resting, added mushrooms, garlic and shallots, cooked till shrooms browned up, added veggie soup base and water, reduced briefly, added drippings from rested meat, spooned sauce over meat. Fast, very tasty, and nearly fat free!
Just because someone tells you that you can't do something doesn't mean you have to listen.
