I was watching a show on Food Network (you know I can't remember the name of it) and they were aging beef in a dedicated cooler that was lined with slabs of Himalayan sea salt. They were aging it for months.

That might have been the show I was trying to remember in one of these threads. It was about a steak house that has a dedicated cooler and marks their beef so they remember when it went in. And I think the walls were salt blocks to control the bacteria or moisture or something (both?).
