I came home from running errands to Monique {13 yr old} announcing that she wanted to cook dinner tonight, I already had the menu shopped for but I was willing to play sous/prep cook for her. She did do most of the work except for the handling of the meat that kept spitting at her.
Herb Stuffing
1 sm shallot {minced fine}
3 sm cloves garlic {pasted with salt}
3 tbsp parma {microplaned}
1/3 c. panko
olive oil {to fully moisten}
-With a knife make a pocket in flank steak
-Spread stuffing evenly inside
-Season outside of steak {S/P/Garlic powder/Onion powder}
-Pan cook or grill till MR
-Remove/Tent/Let rest
-Slice thinly across grain
