I thought I had lost my touch. The last couple of times I cooked ribs on the grill they were not great. Actually one batch I tossed they were so tough..
Tonight... perfect.
I seasoned with my dry rub... seasoned salt, Tony's cajon spices, mixed ground pepper and let stand for a couple of hours in the fridge.
Fired up the grill, put the apple wood where it would smoke up nicely, got the grill really hot, put the ribs on and turned the temp down!! I let them grill bone side down for 40 minutes before even looking at them. Turned them over, sauced the bone side while the meat side cooked... cooked them long and slow. Turned them again and sauced the meat side.. and let them set there and smoke/cook.
Near the end I popped some bi-color corn on the grill to heat.
The ribs were great and the corn as sweet as sugar.... great July 3rd meal!
