What to do with a whole pig head

The only thing I've ever seen them used for is hog's head tamales, traditional for the Christmas holidays in the Mexican culture. (Also really, really good.)

I got the head the last time I bought a hog. It was skinned and split in half, and I just cooked it in a big pot, and picked the meat off.

Made very nice sandwiches, but it is not something I would buy on purpose.

The teeth were a little unsettling.
